Hello, Lykkers! When the weather gets warm, a bowl of homemade ice cream always feels special. Today, we are making Raspberry Ice Cream, a creamy frozen dessert filled with the fresh and slightly tangy taste of raspberries.
Unlike many store-bought versions, this recipe uses real berries and a rich custard base made with milk, cream, and egg yolks, giving every scoop a smooth and silky texture.
This recipe makes about 6 servings and requires some waiting time for chilling and freezing, but the final result is absolutely worth it.

Ingredients We Need

Before we begin, prepare all the ingredients.
For the raspberry puree:
- 2 cups fresh raspberries (about 12 ounces or 340 grams)
For the custard base:
- 4 large egg yolks
- 3/4 cup granulated sugar (150 grams)
- 1 1/2 cups whole milk (360 ml)
- 1 1/2 cups heavy cream (360 ml)
- 1/2 teaspoon kosher salt
- 2 teaspoons vanilla extract
Optional topping:
- A few fresh raspberries for decoration
- 1/2 cup dark chocolate pieces if you want a berry-chocolate flavor

Step 1: Freeze the Ice Cream Bowl

1. At least 24 hours before making the ice cream, place the bowl of your ice cream maker into the freezer.
2. To check if it is ready, shake the bowl. If you do not hear any liquid moving inside, it is completely frozen and ready to use.

Step 2: Make the Raspberry Puree

1. Wash the raspberries gently and let them dry.
2. Place the 2 cups of raspberries into a food processor.
3. Blend for about 30 seconds until completely smooth.
4. Pour the puree through a fine sieve into a bowl.
5. Use the back of a spoon to press the berries and extract as much juice as possible.
6. You should get about 1 cup of smooth raspberry puree. A few tiny seeds are perfectly fine.
7. Set the puree aside.

Step 3: Prepare the Egg Mixture

1. Put the 4 egg yolks into a medium bowl.
2. Add the 3/4 cup sugar.
3. Whisk for about 2 minutes.
4. The mixture should become pale yellow and slightly thick. This step helps create a smooth and creamy ice cream texture.

Step 4: Heat the Milk

1. Pour the 1 1/2 cups whole milk into a saucepan.
2. Place the saucepan over medium heat.
3. Heat for about 3 to 4 minutes.
4. The milk should be hot with tiny bubbles appearing around the edges, but it should not boil.

Step 5: Make the Custard

1. Slowly pour about 1/2 cup of the hot milk into the egg mixture while whisking continuously.
2. Continue whisking until everything is combined.
3. Pour the egg mixture back into the saucepan with the remaining milk.
4. Reduce the heat to low.
5. Stir constantly with a spoon for 3 to 5 minutes.
6. The custard is ready when it becomes thick enough to lightly coat the back of the spoon.

Step 6: Combine the Ingredients

1. Pour the custard through a fine sieve into a clean bowl.
2. Add:
- 1 1/2 cups heavy cream
- 2 teaspoons vanilla extract
- The prepared raspberry puree
- 1/2 teaspoon salt
2. Stir well until the mixture becomes evenly pink.
3. Cover the bowl with plastic wrap, making sure the wrap touches the surface of the mixture.
4. Place it in the refrigerator for at least 3 hours or overnight.

Step 7: Churn the Ice Cream

1. Remove the chilled mixture from the refrigerator.
2. Pour it into the frozen ice cream maker bowl.
3. Churn according to your machine's instructions, usually about 20 to 30 minutes.
4. The ice cream should become thick and resemble soft-serve ice cream.
5. If using dark chocolate pieces, add the 1/2 cup of chocolate during the last 2 minutes of churning.

Step 8: Freeze Until Firm

1. Transfer the churned ice cream into a shallow container.
2. Press plastic wrap or wax paper directly onto the surface.
3. Freeze for at least 4 hours.
4. This final freezing step allows the ice cream to become firm and scoopable.

How to Serve

- Remove the ice cream from the freezer and let it sit at room temperature for about 5 minutes before scooping.
- Serve it in small bowls and top with fresh raspberries if desired.
- The ice cream has a creamy texture, a beautiful pink color, and a bright berry flavor that makes every bite refreshing and satisfying.
